a bengali breakfast favorite, with a burst of flavor and spice.
1 tbsp milk
1 tbsp onion chopped
1 1/2 tbsp tomato chopped
salt and pepper to taste
sprinkle of cilantro
2 green chili peppers chopped
1/4 cup of mozzarella cheese
optional: add jalapeno pepper for added heat or use as substitute to chili peppers
HOW I MAKE IT:
PREP: Gather and prep all ingredients. Chop onion, tomatoes and chili peppers and add to a mixing bowl. Add eggs and remaining ingredients (except the cheese) into bowl and whisk together.
COOK: Fry omelette. Just before removing from pan, add the mozzarella cheese to one half of omelette. Fold omelette in half and flip a few times to allow the cheese to melt.
Serve with your preferred sides and enjoy!
